Eggplant Lasagne 3 Ways

Level 2- Recipes

Ingredients:

  • 1 Eggplant, Sliced and Baked (Baking is optional)

  • 1/2 pound Organic Grass-fed Beef

  • 1 cup tomatoes

  • 1 tbsp. Basil, or 1/2 tsp. dried Basil

  • 2 cups Level 1 Marinara

  • Salt and Pepper to taste

Directions:

  • Preheat oven to 375 degrees.

  • Slice eggplant. Bake on 375 for 10 minutes (optional) This helps reduce water in the eggplant, making it less “soupy”.

  • Simmer beef with spices until cooked through, about 10 mintues

  • Layer eggplant, marinara or tomato sauce.

  • If using a crockpot, cook on low for 4 hours. If using the oven, bake for about 1 hour or until the kithchen becomes aromatic- this is an indication the flavors have melted together!

Level 2, Day 2 Onwards

Add this vegetarian ricotta cheese!

  • 1/2 cup Non-Fat Organic Cottage Cheese

  • 2 tbsp. Nutritional Yeast

  • 2 tsp. Onion Powder
