Roasted Marinated Vegetables

Ingredients:

  • 1 large red onion cut into 1-inch slices

  • 3 stalks of celery sliced into thin wedges

  • 1 bulb of garlic separated into cloves and peeled

  • 1 cup of green cabbage sliced thin

  • 3 spears of asparagus cut into 1-inch pieces

  • 1/2 cup apple cider vinegar

  • 1 lemon juiced

  • 1/2 cup organic vegetable broth

  • 1 tbsp seasoning mix (Trader Joe’s, Costco, or any brand not containing sugar)

Directions:

  1. Mix together vinegar, lemon juice, veggie broth, and seasoning. Reserve 1⁄4 cup of liquid mixture for basting and set aside. 

  2. Add veggies – toss to coat and marinate for 10 minutes. Place vegetables in a non-stick roasting pan. You may also line the pan with parchment paper to make for an easier cleanup. 

  3. Cook at 375 F for 45 minutes, turning and basting every ten to fifteen minutes. Makes 2-3 vegetable servings. Enjoy!
