Ingredients
1 piece whole wheat Melba toast (daily allotment); for those who are on a gluten-free diet, we recommend either crackers by Yehuda or Edward & Sons (both brands can be found at your local Whole Foods)
4 large tomatoes
10 fresh leaves or 2 tsp dried basil
1/4 medium red onion, finely diced
1 tsp (or more, to taste) chopped or minced garlic
Salt and pepper, to taste
Juice of 1/2 lemon
1/8 – 1/4 cup apple cider vinegar
Directions
Chop desired quantity of tomatoes and mix with spices, lemon juice and vinegar. Set mixture in the refrigerator and let sit for 1 hour.
Spread bruschetta on Melba toast (1 piece), or enjoy as a side vegetable dish.
