Bruschetta

Ingredients

  • 1 piece whole wheat Melba toast (daily allotment); for those who are on a gluten-free diet, we recommend either crackers by Yehuda or Edward & Sons (both brands can be found at your local Whole Foods)

  • 4 large tomatoes

  • 10 fresh leaves or 2 tsp dried basil

  • 1/4 medium red onion, finely diced

  • 1 tsp (or more, to taste) chopped or minced garlic

  • Salt and pepper, to taste

  • Juice of 1/2 lemon

  • 1/8 – 1/4 cup apple cider vinegar

Directions

  1. Chop desired quantity of tomatoes and mix with spices, lemon juice and vinegar. Set mixture in the refrigerator and let sit for 1 hour.

  2. Spread bruschetta on Melba toast (1 piece), or enjoy as a side vegetable dish.
