While the traditional poke bowl includes raw fish, this Betr version uses cooked protein for an easy, fun twist.

Ingredients:

  • Bed of mixed greens

  • 4-6 ounces of cubed fish (white fish) 

  • 1/2 a cucumber- sliced thin

  • 1/2 red bell pepper- sliced

  • 2 tbsp coconut aminos

  • 1/4 tsp grated ginger

  • 1/4 cup cilantro, roughly chopped

  • 1 tsp olive oil

  • 1 tsp red pepper flake

Directions:

Bake fish in a 350-degree oven for 15 minutes.  Combine all veggies in a bowl and set aside.  To make the dressing, incorporate aminos, ginger, olive oil, and red pepper flake.  Once fish is cooked plate all ingredients together and drizzle dressing on. Enjoy!
