Servings: 1-2 

Ingredients for Poke bowl:

  • 1 cup of quinoa
  • 1 pound of  salmon
  • Sliced cucumber
  • 1 large avocado, cubed
  • 1 red bell pepper

Ingredients for sauce:

  • 1 lemon
  • 1 tablespoon of olive oil
  • salt and pepper

Directions:

Mix all the ingredients together and enjoy :) Feel free to add in any other veggies to your bowl!
