Corned beef is classic meat choice on this holiday.  Because corned beef, a salt-cured, seasoned beef brisket, it is extremely high in fat and sodium, it would not make for a good choice on Level 1 as traditionally prepared.  A 100-gram serving (about 3.5oz) contains a whopping 973 milligrams, which constitutes 41 percent of an adult's daily recommended value.  To modify it and help reduce the fat/salt content, boil the corned beef several times with fresh water before your final cooking. Just place the corned beef in a large crock-pot or Dutch oven and cover with water. Bring the water to a boil. Remove the corned beef and discard the water.  I would recommend a small portion and instead fill up on the cabbage and a lovely salad!
