Carribean Fish Curry

1 lb fresh cod
1/2 cup white onion chopped
2 cloves garlic
2 heads bok choy
2 red bell peppers diced
1 large tomato chopped
1 tsp curry powder
1 tsp cumin
1 15 ounce can diced tomatoes
1 can unsweetened coconut milk
1 lime
Pink salt/ pepper
1 handful cilantro

Heat olive oil over medium heat. Add onions and garlic until fragrant. Add diced tomatoes, peppers and seasonings. Pour in the can of tomatoes, increase heat to high and bring to a boil. Add coconut milk and simmer for 10-15 mins. Season fish with salt pepper and lime juice. Place fish into the curry until it is cooked through. Serve with lime and cilantro.
