Cooked or raw, brussel sprouts are such a delicious veggie to add into your diet. Brussel sprouts are packed with antioxidants, fiber, and vitamin c and can also decrease inflammation.  This recipe would be a good as a side dish or a good size portion could serve as a light vegetarian/vegan meal on account of its protein content.

Serves 6-8

1 lb brussel sprouts shaved
3 cups arugula
1 medium apple
1/4 cup red onion chopped
1/4 cup walnuts chopped
1/2 cup hemp seeds

Dressing:
2 tbsp olive oil
1 lemon juiced
1 tsp red wine vinegar
2 tsp Dijon mustard
1 tsp maple syrup

Chop, drizzle, mix, enjoy!!
