Ingredients:
Serves 2-4
2 lb fresh cod
1/2 cup white onion- chopped
2 cloves garlic
2 heads bok choy
2 red bell peppers diced
1 large tomato chopped
1 tsp curry powder
1 tsp cumin
1 15-ounce can of diced tomatoes
1 can of coconut milk
1 lime
Pink salt/ pepper
1 handful cilantro
Directions:
Heat olive oil over medium heat. Add onions and garlic until fragrant. Add diced tomatoes, peppers, and seasonings. Pour in the can of tomatoes, increase the heat to high, and bring to a boil. Add coconut milk and simmer for 10-15 mins. Season fish with salt pepper and lime juice. Place fish into the curry until it is cooked through. Serve with lime and cilantro.
