This sweet potato soup is so easy and delicious. Sweet potatoes are gut-building powerhouses with high amounts of antioxidants. They are also rich in fiber keeping us fuller longer making this a great recovery meal after a workout or a long day.
Serves 8-10
Ingredients:
8 sweet potatoes diced
4 large carrots
8 cups of low sodium veggie stock- Pacific Brand
2 onions
3 cloves garlic
Directions:
Sauté onions and garlic with 1 tbsp of avocado oil. Cook until soft. Incorporate carrots and sweet potato. Allow 5-8 mins for the veggies to soften. Pour in broth and bring to a boil. After 15 mins season and blend with an immersion blender or transfer to a food processor. Makes about 10-12 servings.
