4 cups cooked quinoa
1/2 cup almonds
1/2 cup low sodium veggie or chicken broth
1 tbsp apple cider vinegar
1 tbsp olive oil
1/4 cup shallots
1 tbsp rosemary
1 tbsp sage
1 tbsp thyme

Roast almonds in 350 oven until fragrant, about 6-8 mins. Sauté shallots and herbs in the broth and oil. Cook until soft. Mix all ingredients in a bowl, and salt and pepper to taste. It’s a Betr Thanksgiving winner!
