CRAB MEAT SALAD

Ingredients

4 oz. of raw crabmeat (can use king crab pre-cooked – no additives)

Small pinch dried basil

1 tsp of lemon juice

Small pinch chopped scallions

Small pinch dried tarragon

Salt and pepper to taste

Directions

In a skillet, heat the crabmeat with enough water to stir and cook crabmeat thoroughly (about 2 min). Remove skillet from heat and add sea salt, pepper,lemon juice, basil, scallions, and tarragon. Mix thoroughly and serve. Can be served hot, or chilled and served over a bed of lettuce. Makes 1 protein serving.
