BEEF SALAD

Ingredients 

6-8 oz. sirloin steak

1 lime

1/4 cup of cilantro

1 cup of spinach

3/4 cup of sliced cucumber

Optional: Thai seasoning (no sugar or salt added) or pink salt

Optional: garnish with cilantro and lime

Directions

  1. Place the steak into a sealable bag or a small, deep glass dish. In another small bowl, mix the lime juice, salt and cilantro. Pour the mixture into the bag, making sure to coat the steak evenly.  Seal the bag, and put it back in the fridge to marinate (it is best to marinate the meat overnight, but it is okay to leave it for a couple hours). 

  2. When you are ready to grill the steak, add spinach and sliced cucumbers to your salad bowl (you can add other vegetables that are on the level 1 food list, but we thought these vegetables would go particularly well with the steak).

  3. Grill steak for 3-5 minutes each side, or until it has a little bit of pink on the inside. Do not over cook! Add the steak to the spinach and cucumber, and garnish with lime and cilantro. Enjoy!
