Minced garlic to taste

2 tbs of diced onions

1 large handful of chopped spinach

2-3 cups of organic chicken or vegetable broth

1 tsp each of thyme, oregano, basil, and any other Italian spice that you like

Sea salt and pepper to taste


  1. Add onions, garlic, and about 1/4 cup of broth to a small soup pot. Cook until onions become translucent. Add spinach and stir until spinach starts to wilt. Add spices and herbs. 

  2. Add one serving of meatballs (from our recipe book) and the remaining broth. Bring to a boil until meatballs are heated with soup. Add salt and pepper to taste. Makes 1 serving. Enjoy!
