Minced garlic to taste
2 tbs of diced onions
1 large handful of chopped spinach
2-3 cups of organic chicken or vegetable broth
1 tsp each of thyme, oregano, basil, and any other Italian spice that you like
Sea salt and pepper to taste
- Add onions, garlic, and about 1/4 cup of broth to a small soup pot. Cook until onions become translucent. Add spinach and stir until spinach starts to wilt. Add spices and herbs.
- Add one serving of meatballs (from our recipe book) and the remaining broth. Bring to a boil until meatballs are heated with soup. Add salt and pepper to taste. Makes 1 serving. Enjoy!
