Ingredients

1 cucumber - sliced or diced

2 tbsp apple cider vinegar

1 tbsp fresh lemon juice

1 tsp finely minced red onion

Stevia to taste

Directions

Mix ingredients together, marinate for 15 minutes or more (best if left overnight), and serve chilled. Makes one vegetable serving. Enjoy!
