Makes 3 vegetable servings.

Ingredients

2 cups organic chicken broth

2 large or 4 small tomatoes (organic Roma’s work great)

10 Stevia drops

1 tsp lemon juice

1 tsp fresh or dried basil

1/4 tsp black pepper

1/2 tsp onion powder

2 Cloves of minced garlic (or more if preferred) 

Chili powder or cayenne pepper to taste

Directions

  1. Heat 1 clove of minced garlic and 2 tbsp broth in a nonstick pan. 
  2. Puree tomatoes in a blender, and add it to the to the garlic and broth. Cook over medium heat, stirring frequently until it comes to a boil. 
  3. Turn heat to low and add remaining broth, minced garlic, onion powder, and Stevia. Cover and simmer for 15 minutes. 
  4. Stir in basil. Serve sprinkled with ground pepper.  Enjoy!
