Ingredients
4 large organic tomatoes or 6 organic Roma tomatoes
1 cup organic chicken or vegetable broth
1 small can organic tomato paste (Muir Glen)
1 tbsp dried or fresh chopped basil
1 tsp dried oregano
1 tbs minced onion
2 cloves of garlic minced
Sea salt and pepper to taste
Pinch of cayenne pepper to taste
Directions
Chop or puree tomatoes in a food processor. Add spices and heat in a saucepan, slow cook for 30 minutes to an hour. Add additional water to achieve desired consistency. This recipe makes 2 or more servings and is great as a vegetable choice, but can be placed over chicken, beef, or fish. Can be frozen for later use.
