Eggplant Lasagna

Ingredients:

1 Eggplant, Sliced and Baked (Baking is optional)

1/2 pound Organic Grass-fed Beef

1 cup tomatoes

1 tbsp. Basil, or 1/2 tsp. dried basil

2 cups Level 1 marinara

Salt and Pepper to taste

Directions:

  1. Preheat oven to 375 degrees.

  2. Slice eggplant. Optional:  Bake at 375 for 10 minutes - this helps reduce water in the eggplant, making it less "soupy." 

  3. Cook the beef with basil for about 10 minutes or until it's cooked through.

  4. Layer eggplant, marinara, or tomato sauce and beef.

  5. If using a Crock-Pot, cook on low for 4 hours. If using the oven, bake for about 1 hour or until the kitchen becomes aromatic. This is an indication the flavors have melted together!
