Ingredients

2 Bell Peppers, sliced

2 Red Onion, cubed

2 Zucchini, sliced

2 tbsp. Apple Cider Vinegar

2 tbsp. Garlic Powder

2 tsp. Salt & 1 tsp. Pepper

Directions

  1. Preheat the oven to 400 degrees F.

  2. In a small bowl, stir together the vinegar, garlic powder, salt and pepper. Add in vegetables and mix until they are coated. 

  3. Spread the vegetables evenly on a large baking sheet. 

  4. Cook for 30 minutes, turning every 10-15 minutes. Serves 3-4. Enjoy!
